Have you ever heard of baked pancakes? I hadn’t but my family loves pancakes and I figured it was worth checking out!
My kids love chocolate chip, blueberry, and apple cinnamon pancakes. They like circle pancakes and shaped ones as well. So I figured when I came across this old recipe for baked pancakes it was worth a try! I know baked pancakes sound a little strange, but we tried them and we loved them! As the busy mom in the family, I especially loved them!
A traditional pancake recipe leaves you standing at the griddle or the stove while you make pancake after pancake. You have to keep constant vigil so that your pancakes don’t burn. You continue to flip pancakes while trying to prepare the rest of your meal. It usually helps to have an extra pair of hands if you are making multiple items for your meal. Thankfully at our house, my daughter has taken a liking to helping in the kitchen! However, now that we have this recipe for baked pancakes, I don’t have to rely on extra hands anymore. Although, I usually have a few extra little hands around that want to help!
We simply mixed up the batter and added in our chocolate chips, blueberries, or apples. Then we poured it into the greased pan. 15 minutes later we had baked pancakes! We cut them up quick and served them. It was so easy AND I had time to get other things done while they baked in the oven. We added syrup and butter to them just like pancakes! They came out moist and fluffy like regular pancakes as well. All around, this pancake bake is a great addition to our breakfast menu!
The other great part of this recipe is that you can change it up! My kids really like chocolate chip pancakes the best. So I can make a pan of those for them by adding chocolate chips to the batter. I really like blueberry pancakes so I can make a pan of those for my husband and I. Then we can mix and match and eat a little of both! The recipe is so easy to change up and make everyone happy!
- 2 cups pancake mix
- 1 1/2 cups milk
- 1 egg
- 1 Tb. vegetable oil
- 1 tsp. ground cinnamon
- 1 cup chocolate chips, blueberries, or chopped and peeled apples
- Preheat the oven to 400 degrees.
- Mix the pancake mix, milk, egg, oil, and cinnamon until blended. Batter will be lumpy.
- Fold in the chocolate chips, blueberries, or apples at this time.
- Pour into a greased 9 X 13 pan.
- Bake for 10-13 minutes or until golden brown on the top and sides.
- Serve with syrup and butter.
